Butterscotch is so underrated.  Why it took me 42 years to put spring strawberries and melted butterscotch together is beyond me.  I guess I always thought of butterscotch as a holiday flavor.  Well, now everyday is a holiday!  Here is my recipie:

1/2 cup Butterscotch Chips

Strawberries

Place the butterscotch chips in a microwave safe dish.  Microwave on high for one minute and thirty seconds.  Check to see if melted.  Note:  the butterscotch chips will NOT melt down.  They will stay in their “chip” form until you manually stir them together.  Do not overcook while trying to melt them down – this will just cause them to burn.  Depending on your microwave it may take less or more time, just remember to stir them to see if they are melted.

The butterscotch is ready when the consistency is like smooth creamy peanut butter.

Dip your strawberries while the butterscotch is still warm.  Delicious!

Quite possibly the most delicious of all tomatoes.  Wonderfully satisfying on their own or added to salads, sauces or nearly any recipie.  I got this bushel at Trader Joe’s for 7 bucks! Mmmmm!

Picture 6Doctoring up boxed mixes is a specialty in our household.  Baking this way makes it quick and easy and fun – especially for me because the kids can (practically) do it on their own!

What you need:
1 box Trader Joe’s Banana Bread Mix
Vegetable Oil
Egg
Water
1-2 Overripe Banana’s (Yup, the dark icky ones on your counter)
Pumpkin Pie Spice
Cinnamon
Nutmeg

Follow the directions on the box, then add:
1-2 finely smashed overripe banana’s.
.5 tsp pumpkin pie spice.
1 tsp. cinnamon
.5 tsp nutmeg

Mix on low to smooth consistency.  Bake at recommended temperature for 3-5 minutes longer that than recommended time for your pan.

Enjoy Hot!

Note:  Pumpkin Pie Spice, Nutmeg, and Cinnamon amounts may be increased or decreased to taste.

Note 2: The key to this recipe is baking until the top is a dark brown, just on the edge of being overdone.

Note 3: You can also add nuts, but my kids don’t like them so they are not on the list.  Walnuts would be really good!  Next time, I may bake my own with nuts just for me…and burn it slightly, too – mmmm good!
